Roasted Broccoli and Farro Salad with Avocado
What you'll need:
Rigwa Life Bowl
Broccoli, tossed with olive oil, salt + pepper and oven roasted until browned
Farro, cooked (warm or leftover and cooled from the fridge)
Arugula
Avocado
Directions:
In a Rigwa Bowl, toss together cooked Farro, roasted broccoli, cooked chickpeas, sliced almonds, arugula and drizzle with your favorite dressing or oil.
Top with a halved or sliced avocado drizzled in extra virgin olive oil and seasoned with salt and pepper to taste.
Enjoy as is, OR with some naan bread or crostini!
